What is happening at Pearmund Cellars

October is finally here! This is my favorite time of year.  The leaves on the trees are changing colors, the air is nice and cool in the mornings and evenings, and harvest is here! Pearmund Cellars had a great harvest this year.  It took us 3 days to hand pick all 15 acres of Chardonnay and we are super excited about the quality of the grapes this year.

We have many exciting events happening at Pearmund Cellars in the next couple of weeks including our Annual Beast Feast Dinner, November 14, 2009.  This is an exciting dinner as we will feature a wild and exotic menu.  Reservations are required.  Please contact the winery to reserve your space.

Pearmund Cellars Harvest
Harvest at Pearmund Cellars

Its' harvest time at Pearmund Cellars and all of the hard work over the summer has paid off.  You may recall the very wet spring we had and then the dry and hot summer.  Throughout the summer we pruned the vines, cut away the  leaves from the bunches of fruit to increase their exposure to the sun, and mowed a lot of grass.  In the last week we have harvested all of the 15 acres of Chardonnay and they are well on their way to becoming wine. 

The Wine Making Process:
First the grapes are hand picked off the vines.  The grapes are then d-stemmed and put through the press to squeeze the juices out.  After the pressing of the grape is complete, the juice is then put into our large stainless steal tanks.  The juice will stay in the cold tanks for 48 hours to cold settle.  After this process is complete the juice from the tanks, are then racked into barrels.  Inoculation happens once the wine is placed into the oak barrels.  We then add nutrients to the juice and stir.  Once all of the previous steps have occurred, the wine maker plays the waiting game and tend to the barrels, to be sure the end result is the quality wine that you all know and love from Pearmund Cellars.

Harvest is a very busy time at the winery!  The red grapes are coming from our local Virginia Vineyards throughout the month of October.  We hope that you will visit us at Pearmund Cellars to enjoy the fruit of our labor.

Recipes from Lori Tolson
Easy Does it Pot Roast

1 Large Reynold's Oven Bag                                                     1 Tsp Beef Bouillon Low Sodium
1/2 cup flour                                                                                1/2 Tsp. Salt, 1/4 Tsp. Pepper
15oz Tomato Sauce                                                                     1/2 cup Water
4 Lb Rump Roast, boneless
2 Lb Red- skinned Baby Potatoes cut large
Add Parsnips, Carrots, Fennel, and or onion (all bite sized)

Preheat oven to 325 degrees.  Put 1/2 cup flour in large Oven Bag.
Roll down top of bag (in 13x1x2" baking dish)...add tomato sauce, water, low sodium beef bouillon, salt and pepper. Squeeze bag gently to coat everything.  Close bag with nylon tie.  Make several slots to allow steam to escape.  Bake 3 hours!

We have many things happening at Pearmund Cellars over the next couple of months.

October 9th-Ladies Night Out- Leave the men and children at home and enjoy an evening of great wine, a beautiful sunset, and "girl talk".
October 10th- Book Signing with Elliott Walker Rowe, author of A History of Virginia Wines From Grape to Glass.  Mr Walker will be here from 5-8p.  We will have additional copies of this book and his previous book, Wandering Through The Vineyard.
October 30th-
TGIF- Thank Goodness it's Friday with Cabernet Franc and all of his spooky friends. Join the crew at Pearmund Cellars and dress up in your favorite costume!  We will have a costume contest and of course do not be scared, we will be open until 9p
November 14th-BEAST FEAST- Dress in wild animal print or game hunter outfit and bring your most adventurous friends to share our most exotic dinner.  Enjoy regional and international  wild game dishes.  $99 per person + tax and gratuity.  Limited seating, please make your reservation in advance.
November 26- Closed For Thanksgiving
